Bibikhana Pitha

Bibikhana Pitha - A Delicacy of Bikrampur which tastes extremely flavorful. We are sharing Bikramupur's Authentic Bibikhana Pitha recipe which is much easier to prepare.

Ingredients

  • 4 cup Rice Flour
  • 1 pc Coconut medium, grated
  • 500 gm Jaggery
  • 1/2 tsp Salt
  • 1/2 litre Milk lukewarm, thickened by boiling
  • 2-3 pcs Cardamom
  • 1-2 pcs Cinnamon

Instructions

  • In a large mixing bowl take four cups of rice flour.
  • Add grated coconut, jaggery and give a proper mix.
  • Thickened the milk by boiling and then add the thickened milk into the mixture a little at a time to form a smooth batter.
  • Add cardamom and cinnamon to it. Mix again.
  • The batter is ready.
  • Take a pan with a lid and grease with oil.
  • Pour the batter into it and tap lightly to ensure no air pockets remain in the mixture. Cover the lid to seal it properly.
  • Now, take a large kadai with sand in it. Place the pan above the sand/salt inside the kadai and close the lid. The sand/salt should submerge the stand and touch the base of the pan.
  • Over medium flame, cook for approximately one hour. Do keep checking in between.
  • After one hour, open the lid and insert a toothpick. If the toothpick comes out clean, the pitha is done; if not, you need to cook some more time.
  • Once done, open the lid. Loosen the edges with the help of a knife and put it on a serving tray/dish.
  • Let it come down to room temperature.
  • Your Bibikhana Pitha is ready now. Cut into pieces and serve.
