Dudh Pakon Pitha

Barishal's traditional 'Dudh Pakon Pitha' is one of the most elegant pitha among Bangla pitha tradition. Pakon pitha which is soaked in milk is both delicious and beautiful to look at.

Ingredients

For Dough

  • 2 cup rice flour
  • 1/2 cup white flour
  • .5 liter milk
  • 1/4 tsp salt
  • 2 tbsp ghee
  • 1 pc egg

For Syrup

  • 1 liter milk
  • 2-3 pcs cardamom
  • 1/2 cup sugar
  • pinch of salt

Instructions

  • Add milk, rice flour, white flour and salt in a pan. Close the lid for 4-5 mins so that evenly boiled. Mix well with a wooden stick.
  • While it's hot, add ghee, egg and make a smooth dough.
  • Take a small dough and roll into a small ball. Take a pinch of ghee in the hand and shape a small round shape.
  • Make different shapes/designs using a toothpick. Apply ghee in the toothpick on the process (if need).
  • You can try mold also.

  • Heat oil in a pan. Add the pithas when oil temperature is low and deep fry in low-medium heat. When done keep aside for to cool down (lukewarm).
  • For Syrup, in another pan, start boiling the milk. Add sugar, cardamom, and pinch of salt. Boil for 5 minutes.
  • Add the fried pitha into the milk syrup when both the milk and pithas are lukewarm.
  • Close the lid and soak for 3-4 hrs (or overnight).
  • Best to serve in the morning.

Notes

Don't hurry during frying otherwise inside will remain uncooked and later the pitha will be hard.
