Boil the eggs for around 10 mins in a pan. After the eggs have boiled, remove the water and allow the eggs to cool slightly before peeling and chopping them.
Take a bowl. Add the eggs. With a spoon, chop the boiled eggs into little pieces.
Add cucumber, carrots, capsicum, salt, black pepper, mustard sauce, eggless mayonnaise, sugar, and lemon juice into the chopped eggs.
Mix everything well. Taste this and adjust anything according to your taste (if required).
Cut the edge of the bread.
Spread the mixture on a bread slice.
Cover with another slice.
Cut the sandwich with a knife.
Serve egg salad sandwich within 2 hours of preparing.
