Fast, easy, vegetable-packed egg fried oats made with rolled oats!

Ingredients
1/4cupChickenboneless

1 1/2tbspOlive Oil
1/2cupRolled Oats
1/2cupWater
1/4cupLong Beansbite-sized pieces

1/4cupCapsicumdiced
1/4cupCarrotgrated
1/4cupGreen peas

Instructions
Cut your boneless chicken to bite sizes pieces. Add salt, garlic, ginger, soya sauce, and black pepper. Mix them well.
Pour 1 tbsp olive oil into a hot pan. When the oil turns hot, add the chicken. Stir fry for 3-4 mins.
Close the lid for 2-3 mins. Stir occasionally.
Add 1/2 cup rolled oats. Mix and stir for 1-2 mins.
Add water and long beans (optional). Cover for 5-6 mins.
When water is reduced, push the mixture to one side of the pan. Pour 1/2 tbsp olive oil on the other side. Add sliced onion and stir until translucent.
Add 1 egg over the onions. Scramble it and fry until the egg is cooked yet soft.
Mix them all together. Add carrot(very thin sliced/grated), diced capsicum, green chilies, etc (you can add your preferred veggies). Stir for 3-4 mins. Taste and add more salt or soya sauce according to your choice.
Serve hot!

The key to this recipe is to boil the oats with the correct amount of water. It will get mushy if you add more water, and it will be dry if you do not add enough water.
