Ingredients
12pcsdry chilies
1/3cuppanch phoron
1kgraw mangoes
1 cupmustard oil
1tspgarlic paste
1tspginger paste
1tspcoriander powder
1/2tspcumin powder
1/2tspchili powder
1/2tspturmeric powder
1/2tspsalt
1cupsugar
1tspmustard paste
1/4cupvinegar
1tspground masala
Instructions
Add dry chilies and fry the dried chilies
Add panch phoron and dry roast until fragrance
Grind into a fine powder
Slice the raw mangoes into thin pieces and wash and cut the mangoes with outer skin it
Dry the mangoes for at least 4-5 hrs in the hot sun
Add mustard oil
Add garlic,ginger paste and coriander,cumin,chili,turmeric powder stir well
Add the dried mango pcs and add salt
Mix well
Cook it for 5 minutes
Add sugar Mix well
Add mustard paste
Cook it for 15 minutes
Add vinegar
Add 1 tbs ground masala and mix well
Achar is ready when it becomes sticky
