Kacha Amer Tok Mishti Achar

Kacha Amer Tok Mishti Achar is a classic Bangladeshi pickle made with raw mangoes, sugar, and aromatic spices. This achar offers a perfect balance of tangy, sweet, and mildly spicy flavors. It has a thick, glossy, and sticky texture that makes it a delightful side dish for everyday meals or festive occasions. Best enjoyed with rice, khichuri, paratha, or even snacks.

Ingredients

  • 12 pcs dry chilies
  • 1/3 cup panch phoron
  • 1 kg raw mangoes
  • 1 cup mustard oil
  • 1 tsp garlic paste
  • 1 tsp ginger paste
  • 1 tsp coriander powder
  • 1/2 tsp cumin powder
  • 1/2 tsp chili powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp salt
  • 1 cup sugar
  • 1 tsp mustard paste
  • 1/4 cup vinegar
  • 1 tsp ground masala

Instructions

  • Add dry chilies and fry the dried chilies
  • Add panch phoron and dry roast until fragrance
  • Grind into a fine powder
  • Slice the raw mangoes into thin pieces and wash and cut the mangoes with outer skin it
  • Dry the mangoes for at least 4-5 hrs in the hot sun
  • Add mustard oil
  • Add garlic,ginger paste and coriander,cumin,chili,turmeric powder stir well
  • Add the dried mango pcs and add salt
  • Mix well
  • Cook it for 5 minutes
  • Add sugar Mix well
  • Add mustard paste
  • Cook it for 15 minutes
  • Add vinegar
  • Add 1 tbs ground masala and mix well
  • Achar is ready when it becomes sticky
