Gajorer Halua

Gajorer Halua (Carrot Halwa) is one of the most loved traditional desserts in Bangladesh, India, and the Indian subcontinent. Made with freshly grated carrots, milk, ghee, sugar, and aromatic cardamom, this rich and creamy sweet dish is especially popular during winter when fresh carrots are in season. Slow-cooked to perfection, Gajorer Halua offers a delightful balance of sweetness, soft texture, and nutty flavor from roasted dry fruits. Ingredients

  • 500 gm carrots
  • 1/3 cup sugar
  • 1 tsp ghee
  • 4 pcs cardamom
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1 tsp chopped almond
  • 1 tsp chopped pistachio
  • 1 tsp chopped cashew
  • 1/4 cup mawa/khoya

Instructions

  • Add 500gm carrots wash and peel the carrots
  • Grate the peeled carrots into small pieces
  • The grated carrots in a pan for approximately 5 minutes.
  • Add 1/3 cup sugar
  • Mix everything well to combine the ingredients
  • Keep stirring until the water is dry
  • Add 1 tsp of ghee to the sauteed carrots
  • Add 4 pcs cardamom and 1/4 tsb salt
  • Add 1/2 cup milk and keep stirring until dry
  • Add 1 tsp chopped almond, 1 tsp chopped pistachio, 1 tsp chopped cashew, 1/4 cup mawa/khoya
  • Mix and cook for 5 minutes
  • Ready to serve
