Crush black cumin, nut meg, mace and green cardamom together and set aside.
Soak almonds into water for 10 mins and set aside.
Heat oil and ghee into a pan. Fry chopped onioin until golden brown and set aside.
On the same oil add cinnamon, green cardamom, clove and bay leaves. Add mutton (washed and cut into your preffered pieces). Give a good mix, close the lid and cook for 5 minutes. Stir occassionally.
Add garlic paste, ginger paste, salt , garam masala powder, red chili powder , cilantro powder into the mutton and give a good mix. Stir for sometime.
Add the crushed masala. Give a good mix, close the lid and cook until oil seperates. Stir occassionally.
Add the yogurt when the oil separates. Cook for sometime. Stir occasionally.
After some time add the soaked almond (peeled & sliced).
Cook for 30 minutes. Stir occasionally.
Add the fried onions. Give a good mix, close the lid.
Check if the meat is tendered. Add kewra water. Give a good mix.
Cook on a low flame for 10–15 minutes.
Shahi Mutton Korma is ready to serve.
