Instructions
Place the chicken breasts in a pan. Add water to the pot to cover the chicken about ½ an inch above the chicken. Add salt, black pepper, garlic paste, and ginger paste. Cover the lid and cook for approx. 15-20 more minutes.
Once boiled transfer the chicken to a bowl and shredded the chicken.
Whisk the mayonnaise, lemon juice, chopped garlic, black pepper, and olive oil together in a small bowl until combined and smooth.
Add the veggies such as cucumber, carrots, onion, sweet corn, capsicum, tomatoes, etc. Add shredded chicken and salad dressing. Mix them well.
Serve fresh!

To save time, prepare this salad dressing a day or two ahead of time and store it in the fridge for up to 5 days.
If you want to prepare salad dressing without mayonnaise, simply replace 1/4 cup of vegetable oil with the mayonnaise in this recipe and shake well.
