In Bangla tradition, Puli Pitha is one of the most famous pithas. This is the only pitha where multiple fillings can be used. Deep-fried puli pitha, milk-soaked puli pitha, and even steaming puli pitha are all options. Today we’re making the fried version, which will be filled with a coconut-sugar mixture.

Due to the filling and fried version, this pitha is called Narkeler Vaja Puli (Coconut Fried Puli). This is a very simple recipe with a touch of tradition. This is so delicious that you just can’t eat one. Narkeler vaja puli puthi is crispy, sweet, creamy with juicy in every bite.

Narkeler Vaja Puli Pitha

Narkeler Vaja Puli Pitha is a traditional Bengali pitha prepared with rice flour, coconut, and sugar/date molasses. These are the deep-fried version of many types puli pitha.

Ingredients

For Dough:

  • 3 cups Rice Flour
  • 0.5 liter Water
  • 1 tsp Salt

For Filling:

  • 1 cup Sugar
  • 1 pc Coconut medium, grated
  • 2-3 pcs Cardamom

Instructions

Prepare the coconut filling:

  • Heat up a pan. Add sugar and coconut, cardamom, and start mixing.
  • Stir until the mixture is semi-sticky but not runny.

Prepare the Dough:

  • Add water and rice flour and salt to a pan. Close the lid for 4-5 mins so that evenly boiled. Mix well with a wooden stick.
  • While it's hot make a smooth dough.
  • Close it with a damp cloth.

Prepare the pitha: (with cutter)

  • Take a small dough and roll it into a small ball.
  • Roll it out as thick roti/tortilla, about a quarter of an inch thick.
  • Take some filling and give it a cylinder shape.
  • Place the cylinder-shaped filling at the corner of the roti and cover it with roti to give a half-moon shape. Press the edges a little bit to ensure they are stick to each other.
  • Cut around the edges using a cookie cutter. (Check the added video to understand the whole process clearly).
  • Make sure there is no gap.

Prepare the pitha: (without cutter)

  • Take a small dough and roll it into a small ball. Using your hand make a bowl shape.
  • Put 1-2 tsp filling at the center of the bowl.
  • Fold the bowl-shaped dough and design the edges. You can watch the video for a proper view.
  • Repeat the process with the remaining dough.

Fry the pitha:

  • Heat the oil in a pan. Add 4-5 pcs depending on the pan size.
  • Fry the pitha until the dough is cooked through and slightly brown over medium heat.
  • Served hot.
