In Bangla tradition, Puli Pitha is one of the most significant pithas. This is the only pitha where different fillings can be used. Depending on your preference, the filling might be coconut, kheer, or spicy. Deep-fried puli pitha, milk-soaked puli pitha, and even steamed puli pitha are all options. We’re doing it the steamed way today, with coconut-jaggery paste (kheer) as the filling.

Steam is used to cook vapa puli or Bhapa Puli Pitha. Due to its moon-like shape, it is also known as ‘Chondropuli.’ Puli pitha is normally made by hand or with a mold. One of the greatest attractions in Bangladesh during the winter season is the deliciously hot vapa puli.

Vapa Puli with Coconut & Jaggery

Deliciously hot vapa puli is one of the main attractions during the winter season in Bangladesh. In this recipe, we are preparing the steamed way where the filling would be coconut-jaggery paste (kheer).

Ingredients

For Dough:

  • 3 cup rice flour
  • 0.5 liter water
  • 1 tsp salt

For Filling:

  • 1/4 cup rice flour
  • 1 cup milk
  • 1/2 cup jaggery
  • 1 pc coconut medium, grated

Instructions

Prepare the filling:

  • In a pan, start boiling 1-liter of water. Add milk, jaggery, coconut, and rice flour.
  • Keep stirring continuously.
  • When it becomes a thick paste set it aside.

Prepare the Dough:

  • Add water and rice flour and salt to a pan. Close the lid for 4-5 mins so that evenly boiled. Mix well with a wooden stick.
  • While it's hot make a smooth dough.
  • Close it with a damp cloth.

Prepare the pitha:

  • Take a small dough and roll it into a small ball.
  • Using your hand make a bowl shape.
  • Put 1 tsp filling at the center of the bowl.
  • Fold the bowl-shaped dough and design the edges. You can watch the video for a proper view.

Steam the pitha:

  • Take a vessel or pot and fill it with water (3/4th of the vessel or pot) and close it with a cloth. Place it on the furnace.
  • Bring water to a boil and place the pitha above the cloth.
  • Close the lid for 3-4 minutes.
  • Your Vapa Puli Pitha is ready. Served hot!
