Fuljhuri Pitha is a popular Bangladeshi pitha that is thin, crispy, and moderately sweet. Bangladeshi Fuljhuri pitha and traditional Scandinavian Rosette Cookies are pretty similar. It’s known as Achappam in South India and Rose Cookies in other parts of the world.

Fuljhuri Pitha is thin, cookie-like fritters made with iron molds. When you fried the cookies, they are fragile, but after they cool, they become crispy, crunchy, and delicious! This pitha can be made & served very quickly when sudden guests turn up. Everyone will like this traditional fuljhuri Pitha.

Fuljhuri Pitha

Ingredients

  • 1 pc egg
  • 1 cup sugar
  • 2 cups sunned rice powder
  • salt a pinch
  • milk as need

Instructions

  • Add sugar, egg, and salt to a bowl. Beat the egg and start mixing.
  • Stir until the sugar melted.
  • Add rice powder and salt. Add little milk at a time to make a thinner-medium batter.
  • Keep side and wait for 30 minutes.
  • After 30 minutes, mix the batter a bit.
  • Heat the oil on medium heat to warm it up, then keep the fuljhuri mold in the oil for about 1 minute.
  • Put the fuljhuri mold in the batter and dip it a little more than half. Do not let the batter flow over the top of the mold.
  • Place immediately in hot oil. Loosen the rosette with a stick or spoon and remove the mold. Otherwise, pitha will not be able to be removed from the mold.
  • Fry it till it has turned a light golden brown color. Continue with the remainder of the batter.
  • Serve CRISPY!!

Notes

  • You could make several at once with a little practice. Just remember to put the mold in heated oil before dipping it in the batter each time.
  • Allow the pitha/cookies to cool completely before storing them in an airtight container.
