Deliciously hot vapa puli is one of the main attractions during the winter morning

Puli Pitha is one of the most important pitha in Bangla Tradition. This is the only pitha where you can use different fillings. The filling can be either with coconut or kheer or spicy too depending on the choice. Puli pitha can be deep-fried, soaked in milk, or even steamed. Today we are preparing the steamed way where the filling would be milk-sugar paste (kheer)।

Vapa Puli or Bhapa Puli is prepared using steam. It is also called ‘Chondropuli’ due to its moon-like shape. Puli pitha is usually designed using hand or mold. Deliciously hot bhapa puli is one of the main attractions during the winter season in Bangladesh.

Deliciously hot vapa puli is one of the main attractions during the winter season in Bangladesh. In this recipe, we are preparing the steamed way where the filling would be milk-sugar paste (kheer).

Ingredients

For Dough:

  • 3 cups Rice Flour
  • 0.5 liter Water
  • 1 tsp Salt

For Filling:

  • 2 tbsp Rice Flour
  • 1/2 cup Milk for mixing with rice flour
  • 1 liter Milk
  • 1/2 cup Sugar

Instructions

Prepare the filling

  • In a bowl take 2 tbsp rice flour. Add 1/2 cup milk and mix well. Set aside for 10 minutes.
  • In a pan, start boiling 1-liter of milk. Keep stirring continuously.
  • When milk reduces to half, add sugar.
  • Add the soaked rice-milk mixture.
  • Keep stirring. When it becomes a thick paste set it aside. The process might take approx. 1-1.5 hrs.

Prepare The Dough

  • Add water and rice flour and salt to a pan. Close the lid for 4-5 mins so that evenly boiled. Mix well with a wooden stick.
  • While it's hot make a smooth dough.
  • Close it with a damp cloth.

Prepare The Pitha

  • Take a small dough and roll it into a small ball.
  • Using your hand make a bowl shape.
  • Put 1-2 tsp filling at the center of the bowl.
  • Fold the bowl-shaped dough and design the edges. You can watch the video for a proper view.

Cook the pitha

  • Take a vessel or pot and fill it with water (3/4th of the vessel or pot) and close it with a cloth. Place it on the furnace.
  • Bring water to a boil and place the pitha above the cloth.
  • Close the lid and cook for 3-4 minutes.
  • Your Vapa Puli Pitha is ready. Served hot!
