Egg Korma

Egg Korma (Dim Korma) is a rich, creamy, and mildly spiced curry made with boiled eggs cooked in a smooth gravy of yogurt, nuts, and aromatic spices. This royal-style dish is perfect for special occasions, family dinners, or festive meals like Eid. It tastes best with pulao, naan, or paratha.

Ingredients

  • 5 pcs Almond
  • 1/2 tsp Poppy seeds
  • 1/4 cup oil
  • 2 tsp ghee
  • 1/2 cup Onion paste
  • 1/2 tsp ginger paste
  • 2 pcs cinnamon
  • 3 pcs cardamom
  • 1/4 tsp White pepper
  • 1/4 cup water
  • 1/2 tsp Coriander powder
  • salt as per taste
  • 1.5 cup milk
  • 5 pcs green chili
  • 4 pcs egg boiled
  • 1/2 tsp sugar
  • 1/2 tsp keora water
  • fried onion as needed

Instructions

  • Soak almonds and poppy seeds in warm water
  • Blend with a little water to make a smooth paste
  • Heat oil and ghee in a pan
  • Add onion paste and cook on low heat until soft (keep white)
  • Add ginger paste and sauté for 1 minute
  • Add almond-poppy seed paste and cook well
  • Add cinnamon, cardamom, and white pepper
  • Add a little water and cook until smooth
  • Add coriander powder and mix well
  • Add salt and cook for another minute
  • Pour milk slowly while stirring continuously
  • Add green chilies
  • Add 4 boiled eggs
  • Add sugar and mix gently and Simmer for 5–7 minutes
  • Add keora water
  • Add fried onions (beresta) and Cook 1–2 minutes and turn off heat
