Winter is the ideal moment for pitha!
Shemai/Chui Pitha is one of the most famous pitha during the winter season. These traditional pitha has different names such as Shemai pitha, Chui pitha, Chushi pitha, Seoai Pitha, etc depending on the location. Shemai pitha is a little spaghetti-like vermicelli prepared by hand and boiled in milk and jaggery.
These ‘Hate kata shemai’ is popular for its unique and delicious taste which is very easy to prepare. It can be refrigerated for several days. This dish is prepared from rice flour mixed with fresh milk and new jaggery. In some areas, coconut is also used. This is an excellent breakfast during a winter morning.
Hate Kata Shemai Pitha | Chui Pitha
Ingredients
For Dough:
- 3 cups Rice Flour
- 500 gm Water
- 1 tsp Salt
For Shemai:
- 1.5 cup Jaggery
- 1 litre Water
- 1/4 tsp Salt
- 1 litre Milk
Instructions
Prepare the Dough
- Add water and rice flour and salt to a pan. Close the lid for 4-5 mins so that evenly boiled. Mix well with a wooden stick.
- While it's hot make a smooth dough.
- Close it with a damp cloth.
Prepare the shemai/vermicelli
- On a wooden board sprinkle some rice flour.
- Take a small dough and roll it into a long rope.
- Take a small portion from the dough rope.
- Using your hand give a small vermicelli shape.
- Process 1: using your palm; This is the easy way to make the shemai/vermicelli. You can watch the video for a proper view.
- Process 2: using your thenar; This is the traditional way to make the shemai/vermicelli. You can watch the video for a proper view.
- Once all the shemai/vermicelli is done, you can refrigerate up to 1 week in an air ticket box.
Cook the shemai/vermicelli
- In a big kadai/pan, take some water, jaggery, and salt and start boiling.
- When jaggery is melted, add little vermicelli at a time.
- Cook on medium flame. Stir occasionally so that vermicelli don't stick to each other. Cook for 5 minutes.
- In another pan, boil the milk.
- Turn off the heat once vermicelli is cooked and add the boiled milk.
- Stir gently so that vermicelli doesn't break.
- Your 'Hate Kata Shemai' pitha is ready to serve.
